The newly released Final Fantasy 7 Remake Ultimania book has interviews with several key staff behind the game, including Tetsuya Nomura, Yoshinori Kitase, and others. A complete translation of the Japanese book has shed some new light on some interesting areas.
A complete translation of the companion book's major interview can be reached through the post below, or at Aitaikimochi's blog page, and it's well worth a read. Crucially, the interviewer for the Ultimania book asks co-director Tetsuya Nomura about Aerith knowing more than she's letting on, to which the director answers "please wait until the next installment for that answer."

This question is in relation to several points in Final Fantasy 7 Remake, where it's clear that Aerith knows more than she should. She already knows Marlene is Barret's daughter without being told, for example, something that even Tifa picks up on. There's never been a clear answer as to why Aerith knows so much, but it sounds like we'll have to wait until the next installment of the remake for that answer to be revealed.
The point about Aerith knowing so much has been the subject of several fan theories since Final Fantasy 7 Remake's release. One common theory is that Aerith is a time traveller, in the same vein as Sephiroth, having seen the events of the original Final Fantasy 7 play out in some way. This would explain why she knows so much, and it's not out of the realm of possibility since Sephiroth has also somehow managed to peek into other timelines.
As for when the next installment of Final Fantasy 7 Remake will release, there's no answer from Nomura and company on that. Although Nomura jokes that he'd like to release them "as soon as possible" so they can take a breather, he notes in the Ultimania book that it all depends on the scope and size of the additional installments.
